Very Berry Chia Pudding

- 1 pint coconut milk
- ⅓ cup chia seeds
- ½ cup blueberries
- ½ cup strawberries
- ½ cup raspberries
- 2 tbsp. maple syrup
- ½ tsp vanilla extract
- Mix together all ingredients. Transfer to an airtight container and refrigerate for 8 hours or overnight.
- Garnish with spearmint leaves (optional).
- Serve cold.
