Very Berry Chia Pudding

Ingredients
  

  • 1 pint coconut milk
  • cup chia seeds
  • ½ cup blueberries
  • ½ cup strawberries
  • ½ cup raspberries
  • 2 tbsp. maple syrup
  • ½ tsp vanilla extract

Instructions
 

  • Mix together all ingredients. Transfer to an airtight container and refrigerate for 8 hours or overnight.
  • Garnish with spearmint leaves (optional).
  • Serve cold.
