Mediterranean Lentil Salad

Ingredients
  

  • 1 cup lentils cook according to instructions
  • 1 cup English cucumber diced
  • 1 cup cherry tomatoes halved
  • ¼ cup red onions diced small
  • ¼ cup parsley chopped
  • ¼ cup kalamata olives chopped
  • ½ cup feta cheese crumbled
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • 1 tsp honey
  • 1 tsp oregano
  • ½ tsp salt & pepper

Instructions
 

  • Combine the first 7 ingredients in a bowl.
  • Combine the next 7 ingredients in a blender and pour over the salad.
  • Toss together and check for flavor.
