Cherry Cinnamon Muffins

Dried cherries are rich in antioxidants, vitamins, and minerals. They offer numerous health benefits, including improved heart health, reduced inflammation, and enhanced immune function.

Ingredients
  

  • 2 lbs biscuit mix
  • cups coconut milk
  • 4 oz molasses
  • 2 tbsp vanilla extract
  • 1 tbsp cinnamon
  • 2 tsp almond extract
  • 1 cup dried cherries
  • 1 pinch salt
  • powdered sugar, as needed

Instructions
 

  • Preheat oven to 300 degrees F
  • Grease muffin tin and line with muffin liners.
  • Place biscuit mix in large bowl and make a well in the
    center.
  • Pour milk, molasses, vanilla, cinnamon, almond and
    salt into the well.
  • Whisk ingredients together.
  • Fold in the dried cherries.
  • Fill the muffin liners with batter.
  • Bake for 25-30 minutes.
  • Sprinkle powdered sugar over top.
