Split Pea Soup

Split pea soup is a delicious way to stay warm during the chilly winter months while supporting brain health!

Ingredients
  

  • ½ cup diced onions
  • ½ cup diced carrots
  • cup diced celery
  • 1 Tbsp. minced garlic
  • 2 cups diced ham
  • 1 tsp dried oregano
  • 1 tsp dried sage
  • ½ tsp ground mustard
  • ¼ tsp smoked paprika
  • ¼ tsp white pepper
  • 48 oz chicken stock
  • 1 lb. diced potatoes
  • cups split peas
  • 1 oz apple cider vinegar

Instructions
 

  • In a suitable pot, sauté onions, carrots, celery and garlic in olive oil.
  • Add ham and spices and stir for one minute.
  • Add chicken stock, potatoes, peas, and vinegar. Cook on low until potatoes and split peas are soft.
  • Salt to taste.
