Split Pea Soup
Split pea soup is a delicious way to stay warm during the chilly winter months while supporting brain health!
- ½ cup diced onions
- ½ cup diced carrots
- ⅓ cup diced celery
- 1 Tbsp. minced garlic
- 2 cups diced ham
- 1 tsp dried oregano
- 1 tsp dried sage
- ½ tsp ground mustard
- ¼ tsp smoked paprika
- ¼ tsp white pepper
- 48 oz chicken stock
- 1 lb. diced potatoes
- 1½ cups split peas
- 1 oz apple cider vinegar
In a suitable pot, sauté onions, carrots, celery and garlic in olive oil.
Add ham and spices and stir for one minute.
Add chicken stock, potatoes, peas, and vinegar. Cook on low until potatoes and split peas are soft.
Salt to taste.
