Loaded Potato Soup

Ingredients
  

  • 1 cup onions died
  • 1 celery stalk diced
  • ¼ cup olive oil
  • 4 lbs potatoes
  • 1 tsp thyme
  • ½ tsp black pepper
  • ½ tsp caraway seeds
  • ½ tsp ground mustard
  • 5 cups almond milk
  • cups plain yogurt or sour cream
  • 2 lbs shredded sharp cheddar cheese
  • ½ lb bacon cooked and chopped
  • ½ cup green onions sliced for garnish

Instructions
 

  • In a suitable pot, saute onions and celery in olive oil until soft.
  • Add the potatoes and seasonings, stirring together for 2 minutes.
  • Add almond milk and yogurt and bring to a simmer.
  • Stir in the cheese and cook until the cheese melts.
  • Add bacon. Salt to taste.
  • Garnish with sliced green onions when serving.
