Watermelon Berry Salad
Made with refreshing ingredients, this watermelon berry salad is perfect for your next summer picnic or cookout! Blueberries are often considered a superfood and can help maintain brain function and improve memory.
- 1 pint watermelon cubed
- 1 cup blueberries
- ¼ cup feta cheese
- 1½ tbsp lime juice
- 1 tbsp peppermint minced leaves
- 2 tbsp honey
In a large bowl, combine the watermelon and blueberries.
In a small bowl, whisk together the honey, lime juice, and minced mint.
Pour the honey-lime mix over the fruit.
Add the crumbled feta and toss gently.
Garnish with whole mint leaves, if desired.
You can substitute any berries for the blueberries (ex. strawberries, blackberries, etc.)
